Do you love jerky, but
don't have a dehydrator? You can make your own beef or venison jerky right in your oven! This recipe is wonderful for
either beef or venison.

Jerky
Procedure:
Cut meat into
strips 1-inch wide by 5-inches long by
½-inch thick.
Marinate
(see Jerky Marinade recipe) for 24 hours in refrigerator.
Thoroughly
drain off marinade.
Use
your broiler pan or place a cookie rack over a cookie sheet or bread pan to allow air to circulate around meat.
Arrange
meat in a single layer with pieces close but not touching.
Preheat
oven 150 - 200° F.
Place
pan in oven and oven-dry for 7 to 8 hours, turning each piece every 2 hours.
