Vegetable Relish
Ingredients:
10 green tomatoes
4 cups onions
12 peppers, mix green and red
2 heads cabbage
6 cups sugar
2 cups vinegar
2 tablespoons mustard seed
1 tablespoon celery seed
1½ teaspoon turmeric
1 cup water
Procedure:
- Chop tomatoes, onions, peppers, and cabbage.
- Cover with ½ cup salt
and let stand overnight.
- Combine sugar, vinegar, mustard seed, celery seed, turmeric and water.
- Bring to a boil.
- Add vegetables and simmer 3 minutes.
- Ladle into hot jars and adjust lids.
- Process in a boiling water bath for 20 minutes.
- Remove from canner and let seal.
