Mona Ellis's Corn Relish
Ingredients:
12 ears corn, cut off cob
1 small cabbage, chopped
4 medium onions, chopped
4 green peppers and 2 red peppers, chopped
3 tablespoons salt
3 tablespoons flour
2 cups sugar
1 teaspoon turmeric
1 teaspoon dry mustard
1 quart vinegar
Procedure:
- Mix all ingredients in a large pan.
- Simmer 30 minutes.
- Put in pint jars and adjust lids.
- Process boiling water bath for 20 minutes.
- Remove from canner and let seal.
