Home-Canned Deer Meat

Home-canned deer meat, also called venison, is oh-so-tender and juicy! No gamey taste, and can be used to serve for the main course or in any recipe that calls for beef. A wonderful alternative to freezing and the perfect way to preserve the meat if you have a hunter in the family.

Home-canned Deer Meat (Venison)

Procedure:

Cut meat in strips 2-3-inch wide x 5-inch long x 2-inch thick, or into stew-size pieces.
Pack into quart jars, leaving 1-inch headspace.
Add No Liquid.
Add 1 teaspoon salt per quart.
Place lids and bands on jars.
Cook at 10 pounds pressure for 1-½ hour.
Use meat in any recipe that calls for beef.
