 What makes this banana bread so unusual is that it has coconut and chocolate chips as well as nuts.  This combination results in an absolutely delicious bread!  It would be interesting to try peanut butter chips or butterscotch chips.  If you try either, let me know how it turns out. 

 
 
Unusual Banana Bread
 
 
Ingredients:

8 tablespoons butter
1½ cups all-purpose flour

½ cup whole wheat flour
1 teaspoon salt
1½ teaspoons baking powder
¾ cup sugar
2 eggs
3 ripe bananas, mashed
1 teaspoon vanilla extract
¾ cup chopped nuts
¾ cup unsweetened coconut
¾ cup chocolate chips

 
 
Procedure:

  • Preheat oven to 350° F
  • Spray a 9 x 5-inch loaf pan. 
  • Mix dry ingredients together. 
  • In another bowl, cream the butter and beat in the eggs and bananas. 
  • Stir this mixture into the dry ingredients; do not over-mix. 
  • Gently stir in the vanilla, nuts, coconut, and chocolate chips. 
  • Pour batter into the loaf pan and bake for 45 to 60 minutes, until a toothpick comes out clean. 
  • Cool 15 minutes before removing from the pan. 
  • Cool completely before slicing. 
  • Store wrapped in waxed paper.
