Swiss Steak
Ingredients:
¼ cup flour
1 teaspoon salt
¼ teaspoon
pepper
2-pound round steak, cut 1-inch thick
2 tablespoons shortening
½ cup onion,
finely chopped
1 can mushroom pieces
½ cup green
pepper, chopped
1 cup tomatoes, canned, undrained
Procedure:
- Combine flour with salt and pepper and pound into meat.
- In large skillet, melt shortening over medium heat about 3 minutes.
- Do not let shortening smoke.
- Brown steak for 5 minutes per side.
- Add mushrooms, onion, green pepper and tomatoes.
- Simmer over low heat, covered for 1½ hours or until tender.
