Plantation String Beans
 
 
Ingredients:
 
1 pound green beans, strung and snapped
4 slices bacon
4 to 6 scallions
1 teaspoon salt
¼ teaspoon pepper
 
 
Procedure:
  • Snip off ends and slice green beans into thin slivers.
  • Dice bacon and fry until crisp. 
  • Scoop out the bits of bacon, drain on paper towels, and set aside. 
  • Chop scallions and saute' in bacon fat until limp. 
  • Add beans, stir thoroughly, and cook over a moderate heat for about 1 minute. 
  • Add 1 tablespoon water, cover tightly and cook 4 minutes. 
  • Remove cover and continue cooking and stirring until beans are tender but still crisp. 
  • Season with salt and pepper and sprinkle the beans with the drained bacon bits.
