Plantation String Beans
Ingredients:
1 pound green beans, strung and snapped
4 slices bacon
4 to 6 scallions
1 teaspoon salt
¼ teaspoon
pepper
Procedure:
- Snip off ends and slice green beans into thin slivers.
- Dice bacon and fry until crisp.
- Scoop out the bits of bacon, drain on paper towels, and set aside.
- Chop scallions and saute' in bacon fat until limp.
- Add beans, stir thoroughly, and cook over a moderate heat for about 1 minute.
- Add 1 tablespoon water, cover tightly and cook 4 minutes.
- Remove cover and continue cooking and stirring until beans are tender but
still crisp.
- Season with salt and pepper and sprinkle the beans with the drained bacon
bits.
