There are several theories as to how Johnnycakes came to be named.  One is that Johnnycakes was originally an Indian food, and may first have been known as Shawnee cakes.  Another is that they were called journey cakes, since travelers often took packages of them on long trips.  At any rate, it gradually changed into Johnnycakes.

Old-Fashioned Johnny Cakes
 
 
Ingredients:
 
1 cup white corn meal
1 teaspoon salt
1 teaspoon sugar
1¼ cups boiling water
 
 
Procedure:
  • Combine corn meal, salt and sugar. 
  • Stir in water until mixture is smooth.  Batter will be thick. 
  • Drop by tablespoons into a well-greased frying pan and fry over moderate heat for 6 minutes. 
  • Turn and fry on the second side for 5 minutes.
