I always prepare this big breakfast casserole the night before and store it in the fridge.  Then all I have to do the next morning is pop it in the oven and bake.  It's that simple and sooo delicious!  A wonderful and filling way to begin your family's day.

Nanny Robin's Big Breakfast Casserole
 
 
Ingredients:
 
10 eggs, beaten together
1 cup onion, chopped
1 cup green pepper, chopped
2 cups shredded cheddar cheese
1 pound sausage, cooked
1 small can mushrooms, chopped
2 teaspoons salt
1 teaspoon coarsely ground pepper
1 teaspoon dry mustard
3 cups milk
 
 
Procedure:
 
  • Mix all ingredients. 
  • Pour into a sprayed or buttered 9 x 13-inch pan. 
  • Store in fridge. 
  • When ready to cook, bake uncovered in 325° F oven for one hour or until center is firm. 
  • If the top browns too quickly, tent with foil. 
  • Cool 5 minutes before slicing into squares.
