Marita is famous for her pies.  I think this one is the most famous.  It's so delicious you can't stop at one piece!  Of course, I can use her recipe, but somehow my pies never turn out as good as hers.

Marita's Famous Butterscotch Pie
 
 
Ingredients:

2 cups brown sugar
6 tablespoons butter
8 tablespoons cream
2 cups milk
10 tablespoons flour
4 egg yolks
1 teaspoon vanilla

 
Procedure:

  • Cook sugar, butter and cream until thick and brown.
  • The browner it is cooked, the more butterscotch taste it has. 
  • To this add:  the flour, milk and egg yolks which have been mixed well. 
  • Stir constantly when added to the first mixture. 
  • Cook until thick. 
  • Add the vanilla. 
  • Pour into 2 flaky pie crusts which have been baked.
  • Beat the egg whites and add 4 teaspoons sugar and vanilla. 
  • Spread on top of pies and brown the tops a little.

Makes 2 pies
