Peanut Butter-Stuffed Sweet Potatoes
Ingredients:
4 medium sweet potatoes, baked
¼ to ⅓ cup milk
¼ cup peanut
butter
¼ teaspoon
salt
⅓ cup chopped salted peanuts
Procedure:
- Cut hot baked hotatoes in half. Remove potatoes from shell, leaving
shell ¼-inch thick.
- Mash potatoes thoroughly.
- Add milk, peanut butter, and salt to potato pulp, beat with mixer until
fluffy.
- Pour filling into shells.
- Sprinkle peanuts on top.
- Brown in 350° F
oven.
