Cream Cheese Lemon Bars
Ingredients:
1 yellow cake mix
2 eggs, divided
8 ounces cream cheese, softened
2 teaspoon lemon juice
1 cup chopped nuts
For glaze:
1 cup powdered sugar
2 tablespoons water
Procedure:
- Mix dry cake mix, 1 egg and oil until crumbly.
- Reserve 1 cup mixture for topping.
- Pat remaining mixture into ungreased 13 x 9-inch pan.
- Bake for 15 minutes at 350° F.
- Beat together cream cheese, sugar, lemon juice and egg until light and smooth.
- Spread over partially baked layer.
- Sprinkle with chopped nuts, coconut and reserved crumb mixture.
- Bake 15 minutes.
- Cool.
- Glaze: Combine powdered sugar, water and lemon juice.
- Drizzle over cooled bars.
