Cream Cheese Lemon Bars
 
Ingredients:
 
1 yellow cake mix
2 eggs, divided

cup oil

8 ounces cream cheese, softened

cup sugar

2 teaspoon lemon juice
1 cup chopped nuts

½ cup coconut

 
 
For glaze:
 
1 cup powdered sugar
2 tablespoons water

¼ teaspoon lemon juice

 
 
Procedure:
  • Mix dry cake mix, 1 egg and oil until crumbly.
  • Reserve 1 cup mixture for topping.
  • Pat remaining mixture into ungreased 13 x 9-inch pan.
  • Bake for 15 minutes at 350° F.
  • Beat together cream cheese, sugar, lemon juice and egg until light and smooth.
  • Spread over partially baked layer.
  • Sprinkle with chopped nuts, coconut and reserved crumb mixture.
  • Bake 15 minutes.
  • Cool.
  • Glaze:  Combine powdered sugar, water and lemon juice.
  • Drizzle over cooled bars.
