Potato-Onion Supreme
Ingredients:
8 medium potatoes
2 large sweet onions, sliced
¼ cup water
2 tablespoons chicken bouillon granules or 3-4 cubes
2 cups shredded cheddar cheese
2 cups sour cream
¾ cup bread
crumbs
2 tablespoons butter, melted
Paprika
Procedure:
- Cook potatoes in jackets; cool, peel, and slice 14-inch thick slices.
- Place onions, water and bouillon in saucepan; bring to a boil, then simmer
5-7 minutes until onions are tender.
- Drain and set aside.
- Combine sour cream and cheese.
- In a greased casserole, layer half the potatoes, half the onions, and half
the cheese mixture.
- Repeat layers.
- Combine bread crumbs and butter; sprinkle over casserole.
- Sprinkle with paprika.
- Bake, uncovered, at 350° F
for 20 minutes.
