Potato-Onion Supreme
 
Ingredients:
 
8 medium potatoes
2 large sweet onions, sliced
¼ cup water
2 tablespoons chicken bouillon granules or 3-4 cubes
2 cups shredded cheddar cheese
2 cups sour cream
¾ cup bread crumbs
2 tablespoons butter, melted
Paprika
 
 
Procedure:
  • Cook potatoes in jackets; cool, peel, and slice 14-inch thick slices.
  • Place onions, water and bouillon in saucepan; bring to a boil, then simmer 5-7 minutes until onions are tender.
  • Drain and set aside.
  • Combine sour cream and cheese.
  • In a greased casserole, layer half the potatoes, half the onions, and half the cheese mixture.
  • Repeat layers.
  • Combine bread crumbs and butter; sprinkle over casserole.
  • Sprinkle with paprika.
  • Bake, uncovered, at 350° F for 20 minutes.
