Swiss Corn Bake
Ingredients:
2 10-ounce packages frozen corn
2 beaten eggs
1½ cup evaporated milk
2 tablespoons finely chopped onion
¼ teaspooon
salt
Dash pepper
¾ cup shredded
swiss cheese
¾ cup dry
bread crumbs
1 tablespoon butter, melted
¼ cup shredded
swiss cheese
Procedure:
- Grease a 9-inch pie plate, set aside.
- Cook frozen corn according to package directions, drain.
- In a medium mixing bowl combine corn, beaten eggs, milk, onion, salt, and
pepper.
- Stir in ¾ cup cheese
- Pour mixture into prepared pie plate.
- In a small bowl combine bread crumbs and melted butter.
- Stir in ¼ cup cheese.
- Sprinkle over corn mixture.
- Bake, uncovered, in a 350° F
oven for 25-35 minutes or until knife inserted in center comes out clean.
- Let stand 10 minutes before serving.
