Hawaiian Rice Salad
Ingredients:
2 cans (8-ounces each) pineapple chunks, drained; reserve juice
3 cups cooked rice
¼ cup flaked
coconut
¼ cup sliced
almonds
¼ cup chopped
marachino cherries
¼ cup sour
cream
2 teaspoons sugar
¼ teaspoon
salt
Procedure:
- Cut pineapple chunks in half.
- Combine rice, pineapple, coconut, almonds, and cherries in a mixing bowl.
- In another bowl, blend sour cream, sugar, salt, and reserved pineapple juice.
- Pour over rice mixture.
- Toss lightly.
