Eggplant
Pizza Chips
Ingredients:
2 eggs
1 tablespoon water
1¼
cup Italian-flavored bread crumbs
1 large eggplant, peeled and sliced into ¼-inch rounds
cooking spray
2 cups pizza sauce
1 cup shredded mozzerella cheese
Procedure:
- Preheat oven to 350° F.
- In a small bowl, beat
the eggs with the water and pepper.
- Place the bread crumbs
in another shallow dish.
- Line 2 large baking sheets
with aluminum foil and coat generously with non-stick cooking spray; set aside.
- Dip each eggplant round
in the egg mixture, then in the bread crumbs, coating completely.
- Place on the baking sheets
in a single layer.
- Spray the tops with cooking
spray.
- Bake for 15 minutes.
- Turn eggplant rounds
over and coat with cooking spray.
- Bake 15 minutes more.
- Remove from oven.
- Place about 1 tablespoon
pizza sauce on each round.
- Sprinkle mozzerella cheese
over the sauce.
- Return to oven for 4-5 minutes more until cheese
is melted.
