Eggplant Pizza Chips
 
 
Ingredients:
 
2 eggs
1 tablespoon water

¼ teaspoon pepper

1¼ cup Italian-flavored bread crumbs
1 large eggplant, peeled and sliced into ¼-inch rounds
cooking spray
2 cups pizza sauce
1 cup shredded mozzerella cheese
 
 
 
Procedure:
  • Preheat oven to 350° F.
  • In a small bowl, beat the eggs with the water and pepper.
  • Place the bread crumbs in another shallow dish.
  • Line 2 large baking sheets with aluminum foil and coat generously with non-stick cooking spray; set aside.
  • Dip each eggplant round in the egg mixture, then in the bread crumbs, coating completely.
  • Place on the baking sheets in a single layer.
  • Spray the tops with cooking spray.
  • Bake for 15 minutes.
  • Turn eggplant rounds over and coat with cooking spray.
  • Bake 15 minutes more.
  • Remove from oven.
  • Place about 1 tablespoon pizza sauce on each round.
  • Sprinkle mozzerella cheese over the sauce.
  • Return to oven for 4-5 minutes more until cheese is melted.
