Mona Ellis's Corn Relish
 
 
Ingredients:
 
12 ears corn, cut off cob
1 small cabbage, chopped
4 medium onions, chopped
4 green peppers and 2 red peppers, chopped
3 tablespoons salt
3 tablespoons flour
2 cups sugar
1 teaspoon turmeric
1 teaspoon dry mustard
1 quart vinegar
 
 
Procedure:
  • Mix all ingredients in a large pan.
  • Simmer 30 minutes.
  • Put in pint jars and adjust lids.
  • Process boiling water bath for 20 minutes.
  • Remove from canner and let seal.
