Barbecue Meatloaf
Ingredients:
1 cup tomato sauce
½ cup brown sugar
¼ cup vinegar
1 teaspoon dry mustard
2 pounds ground beef
2 eggs, beaten
1 medium onion, finely chopped
1 green pepper
1½ teaspoon salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon parsley
Procedure:
- Make the sauce: Mix together tomato sauce, brown sugar, vinegar, and mustard.
- Set aside.
- Make the meatloaf: Mix together ground beef, eggs, onion, green pepper, oats, poultry seasoning, salt and pepper,
and parsley.
- Add half the sauce to the meatloaf mixture and mix well.
- Bake at 350° F
for 45 minutes to 1 hour.
- Remove from oven and drain off the juices.
- Spread remaining sauce on top and bake 20 minutes more.
- Slice and serve.
