Scalloped Eggplant
Ingredients:
1 large peeled eggplant, cut into 1-inch pieces
5 tablespoons butter
4 tablespoons chopped green pepper
3 tablespoons chopped onion
3 cups cooked tomatoes
1½ teaspoons salt

teaspoon pepper
1 cup buttered bread crumbs
Ingredients:
- Cook green pepper and onion in butter until tender.
- Add tomatoes, salt, pepper, and eggplant.
- Cook slowly for 10 minutes.
- Pour into a greased casserole.
- Spread crumbs evenly on top.
- Bake 350° F
for 25 minutes until eggplant is tender.
