Roast Duck
Procedure:
- Rub the duck inside and out with salt and pepper.
- Put a whole peeled onion and some chopped celery inside the duck or stuff
it with a bread stuffing.
- Rub the duck with cooking oil.
- Roast at 350° F
for about 25 minutes per pound, uncovered.
- When the skin begins to turn, baste the bird periodically with pan drippings.
