Roast Duck

 

Procedure:

  • Rub the duck inside and out with salt and pepper.
  • Put a whole peeled onion and some chopped celery inside the duck or stuff it with a bread stuffing.
  • Rub the duck with cooking oil.
  • Roast at 350° F for about 25 minutes per pound, uncovered.
  • When the skin begins to turn, baste the bird periodically with pan drippings.
