Coconut Bread
Ingredients:
2 cups shredded coconut
1 cup mashed fruit of your choice (peaches, apples, bananas, etc.)
5 eggs
2 teaspooons salt
2 teaspoons baking soda
4 cups flour
1 cup brown sugar
Procedure:
- Combine coconut, fruit, and eggs, and mix well.
- Sift together salt, baking soda, and flour.
- Add brown sugar and mix all ingredients well.
- Let rest 20 minutes.
- Stir once.
- Pour into a greased pan.
- Bake at 350° F until
done.
- Cool and serve.
