Coconut Bread
 
 
Ingredients:
 
2 cups shredded coconut
1 cup mashed fruit of your choice (peaches, apples, bananas, etc.)
5 eggs
2 teaspooons salt
2 teaspoons baking soda
4 cups flour
1 cup brown sugar
 
 
Procedure:
  • Combine coconut, fruit, and eggs, and mix well.
  • Sift together salt, baking soda, and flour.
  • Add brown sugar and mix all ingredients well.
  • Let rest 20 minutes.
  • Stir once.
  • Pour into a greased pan.
  • Bake at 350 F until done.
  • Cool and serve.
