Southern Spoon Bread
 
 
Ingredients:
 
2 cups milk

½ cup cornmeal

1 teaspoon salt

½ teaspoon baking powder

2 T sugar
2 T melted butter
3 eggs, separated
 
 
Procedure:
  • Scald milk.
  • Add cornmeal.
  • Cook together until thick, stirring.
  • Add salt, baking powder, and sugar.
  • Beat egg yolks and add to cornmeal mixture; set aside.
  • Beat egg whites to soft peaks and fold into batter.
  • Pour into buttered 1½ quart casserole.
  • Bake 375° F for 30-45 minutes until golden brown and puffed like a souffle.
