Southern Spoon Bread
Ingredients:
2 cups milk
1 teaspoon salt
2 T sugar
2 T melted butter
3 eggs, separated
Procedure:
- Scald milk.
- Add cornmeal.
- Cook together until thick, stirring.
- Add salt, baking powder, and sugar.
- Beat egg yolks and add to cornmeal mixture; set aside.
- Beat egg whites to soft peaks and fold into batter.
- Pour into buttered 1½
quart casserole.
- Bake 375° F
for 30-45 minutes until golden brown and puffed like a souffle.
