Home-canned deer meat, also called venison, is oh-so-tender and juicy!  No gamey taste, and can be used to serve for the main course or in any recipe that calls for beef.  A wonderful alternative to freezing and the perfect way to preserve the meat if you have a hunter in the family.

Home-canned Deer Meat (Venison)

Procedure:

  • Cut meat in strips 2-3-inch wide x 5-inch long x 2-inch thick, or into stew-size pieces.
  • Pack into quart jars, leaving 1-inch headspace.
  • Add No Liquid.
  • Add 1 teaspoon salt per quart.
  • Place lids and bands on jars.
  • Cook at 10 pounds pressure for 1-½ hour.
  • Use meat in any recipe that calls for beef.
