When you've removed all the meat from the turkey, don't throw away the carcass!  You can make this very rich, delicious broth and can it for future use in recipes that call for chicken broth.

Canned Turkey Bone Broth

Procedure:

  • Place turkey carcass in a large pan and cover with water.
  • Boil one hour.
  • Remove from broth and strain broth.
  • Re-heat broth to boiling.
  • Pour into pint or quart jars, leaving ½-inch headspace.
  • Add ½ teaspoon salt to each pint, 1 teaspoon per quart.
  • Adjust lids.
  • Process in pressure canner at 10 pounds pressure for 35 minutes.
  • Remove from canner, allow to cool and let seal.
