Bacon-Tomato Succotash
 
 
Ingredients:

6 strips bacon
3½ cups frozen baby lima beans
4 cups frozen corn kernals
1 14-ounce can diced tomatoes, drained
1 tablespoon butter
½ teaspoon each salt and pepper

 
 
Procedure:

  • Cook, drain, and crumble bacon. 
  • Cook beans and corn as directed on package. Drain.
  • Mix together and stir in tomatoes, butter, salt and pepper. 
  • Sprinkle top with bacon.
